My neighbor offered me some Zucchini.
I felt kind of funny having to ask her what I should do with it!
I have never cooked it or ate it before.
So she not only gave me the zucchini but she gave me a recipe to try as well.
Double Chocolate Zucchini Muffins
2 1/3 c. flour
1 1/4 c sugar
1/3 c baking cocoa
2t. baking powder
1 1/2 t. cinnamon
1t. baking soda
dash salt
1 c. sour cream (I used light)
1/2 c veggie oil
2 eggs
1 c. milk chocolate chips
1 c. shredded zucchini
combine all ingred. and fill muffin cups. Bake at 400* for 30 minutes.
Now I did these in regular muffin size tins and notice after about
